I love quiche, especially the quiches (is that a word?!) like my mom used to make. I always think of quiche as fancy and difficult but really it is super simple and perfect for a busy night when you need to finish some after hours work, write a blog post or feed starving kids when they walk in the door. (Mine are always super hangry when they get home from after school sports and activities. All that stuff makes you HUNGRY!) This super easy quiche is loaded with protein and healthy vitamin packed broccoli. And so yummy your kids might even eat it! You can always play with the veggies you use.
Ingredients
- 1 uncooked pie shell (I use frozen to make this super simple but make your own if you prefer)
- 1 tsp olive oil
- 1/4 cup chopped onion (or more if you really like onion)
- 4 cups chopped fresh broccoli (I know it's alot but it makes it a very broccoli packed quiche and super yummy!)
- 1 cup plus of shredded cheddar cheese blend. I like a blend of mild yellow cheddar and white cheddar
- 4 eggs beaten
- 1 cup half and half
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper (I used freshly cracked pepper)
Instructions
- Preheat oven to 375
- Add chopped onion to skillet with olive oil and saute until soft.
- Add cooked onion to pie shell.
- Add chopped broccoli to uncooked pie shell. This should fill the pie shell. You can adjust depending on how broccoli ish you want it.
- Add shredded cheese mixture to pie shell.
- Mix filling to combine.
- Whisk eggs and half and half in bowl. Add salt and pepper.
- Pour egg mixture over ingredients in pie shell. push the broccoli into the egg/milk mixture to cover as much as possible.
- Place uncooked quiche on baking sheet and place on center rack. Bake until quiche is browned on top and no longer jiggly. Usually about 40 minutes but check at 30 minutes especially if you use a convection oven. Insert a knife in middle and the quiche is ready when it comes out clean.
- Let quiche cool slightly and set for about 15 minutes
- Enjoy! We had ours with strawberries on the side but a salad with lemon juice and olive oil dressing would be sublime.
