Rainbow Honey Lime Cilantro Slaw
So some people just really love cilantro and some people just really hate cilantro. I hear it’s genetic. To those unlucky ones who think cilantro tastes like soap, this may not be the recipe for you. Or leave out the cilantro. For the rest of us, this is some yummy slaw. You can spiralize or shred the veggies however you like. It’s best if it gets some alone time in the fridge – like I need some alone time in a warm bath with epsom salts and lavendar before the dinner crowd arrives.
Ingredients
- Rainbow Honey Lime Cilantro Slaw
- The veggies for this can be shredded or spiralized. Spiralizing is pretty but shredding works too.
- One cup daikon shredded or spiralized
- Two cups jicama shredded or spiralized
- One cup carrots shredded
- One Bunch of Cilantro chopped coursely (more or less depending on your love of cilantro)
- Mix these together in a glass bowl and set aside.
- Honey lime Cilantro sauce
- One lime
- 1 TB olive oil
- 1 TB honey
Instructions
- Combine veggies and cilantro
- Mix lime juice and honey together and warm in microwave or about 10 seconds or on stove over low heat to melt honey. Mix well and pour over veggie mixture.
- Place in the refrigerator for the flavors to mix while the salad chills. Enjoy alone or as a side dish.
